Invigorating Herbal Vinegar — A Website Exclusive

For a wonderful way to add herbs to your meals, try this fresh herbal vinegar.
To make a spring herbal vinegar, gather and chop leaves and flowers from a plant of your choice. Pack lightly to fill a mason jar. Pour apple cider vinegar (or another vinegar) over the plant material until the jar is full. Cap with a plastic lid or put a paper towel between the vinegar and the metal mason jar lid, otherwise the acidic vinegar will corrode the metal lid. Stir several times a day for the first week, always pushing the plant material under the vinegar when finished, and recap. Let sit for 6 weeks, strain and then it's ready to become part of your fabulous, nourishing salad dressing. Or add to stir fries or take it by the spoonful. Enjoy!
